“We started a tapa bar and created a beautiful menu that resembles… one you might find in a fantastic tapa bar you might find in Barcelona, Madrid, or Valencia. 

“Everybody in New York has seen patatas bravas. I don’t think anyone’s seen them like this… we smash fingerling potatoes, fry them so they’re really crispy, and serve it with an uni-infused mayonnaise” and estratto.
